Malaysian Banana Fritters Recipe

This is a recipe from my mum, she always used to fry me up a batch when I was a child whenever she had some overripe bananas. It is absolutely delicious served fresh, piping hot and crispy. A teaspoon of dessicated coconut can also be added to the batter if you like.

Ingredients (makes around 10 fritters):

  • 4tbsp water
  • 4tbsp self-raising flour
  • 1tbsp castor sugar
  • pinch of salt
  • 1/2 tsp baking powder
  • 1 large ripe banana
  • vegetable oil

Directions:

  • Mash the banana in a bowl.
  • Add the rest of the ingredients and mix well.
  • Heat some oil in a pot and put spoonfuls of the mixture in the oil.
  • Deep fry the fritters until they turn brown.
  • Drain the excess oil on a kitchen towel on a plate and then serve hot.

  1. You can freeze the over ripe bananas and use them whenever needed. The peeling turns black, but the fruit inside is not harmed. Just remove the peeling before mashing the banana. I have made this recipe below, and have received a lot of great comments on it. Enjoy… Jack Daniels Cake 1 box dark chocolate cake mix 4 eggs, lightly beaten 1/2 cup Jack Daniel’s Whiskey 1/2 cup black coffee 1/4 cup broken pecan pieces 1 very ripe banana 1 stick butter, softened Preheat oven to 350F degrees. In the bowl of an electric mixer combine all together, except the pecan pieces. Mix on medium-high 1-2 minutes until ribbon like consistency is achieved (do not overmix or cake will be tough). Spray a Bundt cake pan with Pam to coat lightly. Put pieces of nuts in the bottom. When cake mix is mixed well, pour batter into the pan, level off in center, and bake 45-50 min or until toothpick inserted in center is nearly clean.
